At Le Manège restaurant, we believe in the art of French gastronomy and are committed to offering our customers an exceptional culinary experience. Located in the former stables of the estate's draught horses, our restaurant gives pride of place to local produce from Bordeaux. In fine weather, our shaded terrace, which once housed the round pen, invites you to unwind and recharge your batteries in the heart of nature.

The chef
marouane el ghouasli

After building his career in several establishments, including Michelin-starred restaurants, throughout France, Marouane El Ghouasli is now taking over as head chef at Le Manège restaurant in Léognan.

His demanding experiences have refined his technique, his rigor, and his vision of the profession. Building on this background, he has chosen to focus on simpler, more accessible, and sincere cuisine, drawing on his years of training.

With a strong commitment to local produce, he creates dishes that reflect the seasons, respecting the nature of the ingredients and the balance of flavors.

At Le Manège, he has developed a masterful style of cooking, guided by the ingredients, seasonality, and respect for teamwork.
